4. Roast to Golden Perfection
- Heat a tawa (griddle) on medium flame.
- Place the rolled oppu on the tawa. Cook for 30 seconds, then flip.
- Brush the top side with ghee. Flip again.
- Now brush the other side with ghee. Press gently with a spatula – you will see the layers separating and the surface turning into a beautiful golden-brown ("Prakashana").
- Cook until both sides have crispy, reddish-brown spots.
